So What Wednesday

Happy Wednesday y'all!

I saw Ashley over at It's just a bunch of Hocus Pocus doing this linkup for a couple of weeks now so I'm taking a break from What I'm Loving Wednesday and linking up with Shannon for So What Wednesday!



This week I'm saying SO WHAT! if...

... I haven't blogged since Friday. I was very busy over the holiday weekend!

... I'm about to kill my rescue dog Youri. He is special and has lots of problems. He pooped on me two nights ago, threw up on me last night, and got poop on the sheets as I was crawling into bed. You'd be about to kill him too.

... I stayed up until 3 o'clock in the morning watching the first season of One Tree Hill with my sister. I needed to know what happened!

... I didn't count points over the weekend. There was way too much yummy food for me to do that to myself! Luckily I didn't do too much damage on the scale :)

... if my house is a mess. I'm getting some good painting done.

Friday Confessional

Happy Friday y'all!

These are my confessions.

I confess... that yesterday morning when I stepped on the scale, and it said 139.8, I got back on the scale just to double check. I can't believe I've reached the 130's! Again, thank you Weight Watchers!

I confess... that I may not be so diligent about counting points this weekend since I have tons of fun planned for the Fourth with my family.

I confess... that I bought Youri and D'Artagnan matching polos to wear for the Fourth of July. Hey. They were on sale.

I confess... that I am super excited about date night with Chris tonight! We are going out for Mexican :) Surprise, surprise right?!

What I'm Loving Wednesday

I'm loving that my husband and I are headed to Charleston this weekend for the Fourth of July!

I'm loving that I found these two shirts for both my sweet, adopted furbabies on clearance at PetSmart!


I'm loving that I went shopping over the weekend for the fist time in a while. I found these cute things from Forever 21!










 I'm loving that these finds were paid for via gift card :)

I'm loving that my husband went willingly with  me to the mall and waited patiently for me to scan the racks numerous times until I found what I wanted.

I'm loving that while trying on clothes, I found that I have gone down a pants size. Thank you Weight Watchers!

I'm loving that my one year anniversary is only a month away! I can't believe it!


And as always, I'm loving my sweet husband!

Thankful Thursday

Happy Thursday y'all!

Here's what I'm thankful for on this beautiful day!


I'm thankful for hot showers! After all the painting and cleaning I've been doing to my house this week, a hot shower at night is the best thing in the world.

I'm thankful for a short work week this week.

I'm thankful that my family got home safely from their cruise and had a great time!

I'm thankful that my mom got to swim with the dolphins! My mom had been looking forward to swimming with the dolphins ever since she started planning the cruise. When they got to the place with the dolphins the group was taking turns, and they could hear a thunder storm in the distance getting closer and closer. My mom was afraid that it might start storming, and she wouldn't get to swim with them. But the storm held out long enough for her to get her turn :)



I'm thankful that my parents' cat came home! When they came home from the cruise our outdoor cat, Muffin, was missing for a couple of days, and they were very upset. She found her way home yesterday though and has been getting the royal treatment :) I'm so glad she came home. We've had her for 12 years so it wouldn't be home without her!


I'm thankful for the great weekend my husband and I got to spend together this past weekend! It was so nice to be able to spend time together just having fun!

I'm thankful that my husband cooked dinner last night so that I could finish working on the dining room.

I'm thankful that I live close enough to my family that they can come up to see me this weekend for my birthday!

I'm thankful that I can talk to my mom on the phone again! I normally talk to her everyday so it was tough while she was on the cruise :)

I'm thankful that Youri had a good check up at the vet and is completely healthy!


I'm thankful that fruit has a zero points value for Weight Watchers. I don't know what I'd do if they didn't!

I'm thankful for my sweet husband who always loves me no matter what.

Miscellany Monday

{dinner and a show}

Last night my husband and I went out to dinner at O'Charleys with his parents for my birthday which is Saturday. My husband and I went to our local amusement park, Carowinds, after dinner to see the special Memorial Day LED light show and fireworks. We had such a great time!









{what goes up, must come down}

I am still seeing the number on the scale drop thanks to Weight Watchers! I've almost lost ten pounds on the programs, fifteen all together. Also, I'm only two pounds away from reaching weight loss goal number two!

I'm very excited to host my new linkup, Thankful Thursday, for the very first time this week! I'm hoping to see a lot of people participate and share what all they're thankful for this week.

I just wanted to thank everyone who has served or is currently serving in our armed forces. I also want to thank the families of those who have served and are currently serving. {baby proof}

I just finished reading Emily Giffin's book Baby Proof. I thought it was a good book but not as good as the other two in the series. Did anyone else think that compared to the other two this one was kind of a let down? I think I just expected so much more out of the book that I couldn't help thinking, "That's it?!"

A Recipe A Week: Week 9


Happy Thursday y'all!

My recipe this week is one that I got from Weight Watchers!

Dijon-Roasted New Potatoes
from the Weight Watchers website


PointsPlus value: 4 per serving
Serves: 4
Preparation time: 10 min
Cooking time: 35 min


1 spray(s) cooking spray
2 Tbsp Dijon mustard
1 tsp olive oil
3/4 tsp paprika
1/2 tsp table salt
1/4 tsp dried thyme
1/4 tsp black pepper
1 1/2 pounds uncooked new potatoes,
red or white, quartered or  
halved   

1. Preheat oven to 425 degrees. Coat a 9 x 13 inch baking dish with cooking spray.

2. In a large bowl, whisk together mustard, oil, paprika, salt, thyme, and pepper; add potatoes and stir to coat.



3. Transfer potatoes to prepared baking dish and roast 15 minutes; stir and roast until tinder on inside, about 15 to 20 minutes more. Yields about 1 1/4 cups per serving.


** I used honey Dijon mustard rather than Dijon mustard **


These were really good and really healthy which is a plus! My husband and I were really surprised that they didn't have a mustard-y taste to them. They just tasted like regular roasted potatoes. I don't know if me using honey Dijon mustard rather than Dijon mustard has anything to do with that or not.

Friday Confessional

I confess... that Aunt Flo coming to visit this weekend is the worst thing that could have happened on so many levels, and she's not even here yet! Doesn't she know that I have a PT test to take? A 2-mile run that's hard enough without her wanting a piggy back ride during it. Don't even get me started on Weight Watchers....she knows I'm on a diet, and when she visits she brings all kinds of tasty things along that I want to eat! She's so selfish putting all her needs before mine!


I confess... that I also blame my stand still in my weight loss on her. I haven't gained any, but I haven't been able to lose any either. It's all her fault right?!


I confess... that she has also put me in a rather bad mood. So it's a good thing that it's confession day :)


I confess... I'm a little peeved that she's taken up so much of my post today. Like I said...selfish.



I confess... that I may be a little slack about posting for the next couple of days. Army Reserves weekends are pretty long and exhausting. But I promise to do my best!


I confess... that I stayed up until 4:00 a.m. reading Something Blue a couple of nights ago. I just couldn't put it down!



I confess... that I actually had to sit and think about the last time I put on makeup. Since I've been out of school, I've just been around the house working and haven't really seen the need to take the time to fuss with makeup. Or doing anything with my hair except throw it in a ponytail. Or wear anything besides a t-shirt and gym shorts. Talk about frumpy.

I confess... that my house looks pretty good even if it is at the expense of my appearance.

I confess... that I can't promise next week won't be the same way because I'm planning on doing a lot of painting.


I think I need to stop while I'm ahead ;)

Miscellany Monday

Miscellany Monday @ lowercase letters

{much needed quality time}

My husband and I live about 20 minutes away from an amusement park Carowinds. Since we live so close, we got season passes so we could enjoy going this summer while I'm out of school. The neatest part about Carowinds is that it sits right on the border between South Carolina and North Carolina. I remember as a kid thinking it was so neat to hop back and forth between the two states and wave to my parents on the other side of the border. The park has a two track roller coaster called Thunder Road that divides the border and has a South Carolina train and a North Carolina train. There's a lot more than that, but I always thought it was cool. My husband and I went yesterday and had such a good time! We definitely needed some time together to just have fun. I'm excited because the water park inside Carowinds will open up for the first time of the season Memorial Day weekend, and we are planning to go! There's supposed to be fireworks :)

This was my husband and I last year when I came for a visit before we got married. He was on the SC side and I was on the NC side.

I have finally had the time to sit down and read some books that I had really wanted to read but didn't have time to because of school. Thanks to everyone who gave me book suggestions! I hope I have enough time to make it through my summer reading list!

I am beyond excited that on Saturday my favorite country singer Miranda Lambert tied the know with Blake Shelton! I'm going to need pictures of the wedding posted pronto! I hear she wore her mom's wedding dress :)

{operation skinny minny}

I am happy to report that operation skinny minny has been a huge success so far! Thank you Weight Watchers! This is the first time that I have able to stay committed to a diet, and it's nice to see the results! I have two weeks until I have to wear a bathing suit for Memorial Day weekend....hopefully I can drop four more pounds by then :)

Well...that was random :)
