Friday Confessional

Happy Friday ya'll!

I have TONS of confessions to make today :)

I confess... that I have been seriously slack when it comes to blogging this week. Give me a break, I've had exams! Do.Not.Judge.Me.
 
I confess... that my lack of blogging this week has made me very sad :(
 
I confess... that I may be a little slack until Tuesday when my last exam is done.
 
I confess... that having an exam today and an exam tomorrow (SATURDAY) morning is not making me real excited for the "weekend".
 
I confess... that these pictures make me feel better because they amuse me :)
 
 







I confess... that I am losing weight on Weight Watchers!!!!!
 
I confess... that I can not wait until my weigh in on Sunday to see my progress!
 
I confess... that I ate nothing with points for lunch today so I can use all my points tonight on my usual Mexican date with my husband ;)
 
I confess... that I am seriously missing regular Coke and sweet tea right about now and have an extreme disgust for Diet Coke....
 

....and this would be why I'm drinking it!

I confess... that it has been a really long time since I was able to sit down at the computer and write this many confessions without thinking!

A Recipe A Week: Week 5



Sorry I have been a little MIA this week. Exams are killing me!

I couldn't forget about my recipe a week though :) This is another super quick and easy recipe.

Roasted Salmon with Lemon and Dill
from Southern Living April 2011 Issue

Makes: 4 servings Hands on time: 15 mins. Total Time: 30 mins.

4 (6-oz.) salmon fillets 
1/2 tsp. salt                  
1/4 tsp. freshly ground  
pepper
8 fresh dill sprigs           
4 lemon slices, halved    

1. Preheat oven to 425 degrees. Place salmon fillets on a lightly greased rack on an aluminum foil-lined jelly-roll pan; sprinkle with salt and pepper. Place 2 dill sprigs and 2 lemon halves on each fillet.

2. Bake at 425 degrees for 15 to 20 minutes or just until fish flakes with fork.

*I added just a little of McCormicks Grill Mates Lemon Pepper Seasoning for flavor.*

1. I'm one of those people. You know....the ones who wear flip flops year round even in the winter? I can't help it! I just like my toes to be free :) I have gotten a little better about it though.


2. I love for the room to be cold when I sleep at night. There's just something about snuggling under all the covers that makes me happy :)

3. I really want to have a pet mini pig someday! They're just too cute!



4. I am trying really, really hard to learn Spanish. I took a lot in high school, but I didn't really care about it then. Now that I'm in college, I'm loving it and find it fascinating! How cool would it be to raise bilingual children?!

5. Jeeps are my favorite car! When I graduated from high school, my parents bought me a Jeep Wrangler. Now, I have a Jeep Cherokee.


6. I try to avoid wearing red at all costs. It's just not my color!

7. Clowns really freak me out! During October the theme park we live near, Carowinds, turns into Scarowinds for halloween. They run all the rides in the dark and have haunted houses set up around the park. My husband loves to drag me into the Big Top haunted house because it is filled with clowns! There will be NO picture!!

1. I am a liscensed massage therapist. I'm not currently working, but I loved it when I did. I hope that once I get my degree I can get a job doing something a little more reliable though.

Miscellany Monday

{Easter Weekend Recap}

On Saturday, my husband and I went down to Charleston to visit my family. We spent the day at the beach and dying Easter eggs. Yesterday we went to church and came home to the most delicious lunch of ham, butter beans, sweet potatoes, and crescent rolls that my mom prepared! I made my seasoned red potatoes :) It was a great weekend and way too short!








{Reusable Ice Cubes}

I have always put my drinks in the refrigerator to get them cold because I don't like ice in them. I just hate the way they get watered down and lose the taste. On Friday, my husband and I went to Bed Bath & Beyond, and I found the best product ever...reusable ice cubes! They are little cubes filled with distilled water that you put in the freezer and use just like regular ice. Except no more watered down drinks :)


{Weight Watchers}

I have decided to get in on the fun and join Weight Watchers! Today is my first official day with the program so I'm sure I'll be keeping everyone up to date with my progress. I put a ticker at the bottom of my page so you can see how much weight I've lost :)

Friday Confessional

I confess... that thoughts of my Lord and Savior Jesus Christ on his way to the cross to die for ME and MY SINS are heavy on my heart today.
 
 
I confess... that yesterday's recipe for my A Recipe A Week was actually made last week because that's when I had strawberries that needed to be used :)
 
 
I confess... that I am really excited about the trip to Charleston with my husband to spend Easter with my family!
 
I confess... that I still haven't found an Easter dress yet!
 
I confess... that I am extremely excited that Monday is my last day of classes before exams!

Five Question Friday

1. What is your favorite Easter tradition?
2. Are you a "shower" or a "long, hot bath" kind of person?
3. Can you parallel park, and if so when is the last time you did it?

5. Do you go all out with the Easter bunny or focus on the religious part of the holiday?

1. What is your favorite Easter tradition?

I love dying Easter eggs! My mom, my sister, and I always dyed them every year. No matter how old we got :) My husband and I just dyed them together this year for the first time!


2. Are you a "shower" or a "long, hot bath" kind of person?

Well, I wish I had time to be a long, hot bath kind of person, but in reality I'm a shower kind of person. I occasionally take a bath after a long, hard day. In general though I take a shower every morning because it's what I have time for, and it helps me wake up!




3. Can you parallel park, and if so when is the last time you did it?

Yes! When you go to downtown Charleston if you want to park somewhere besides a parking garage, knowing how to parallel park is a must! The last time I did it was when I had to drive my dad's truck, and when I got home I had to parallel park it between his work truck and the garage.

4. What is your favorite Easter candy?

Reese's peanut butter eggs! Of course, Reese's are my favorite candy any day :) I also need to have Peeps around Easter. I can't imagine an Easter where I didn't have any!




5. Do you go all out with the Easter bunny or focus more on the religious part of the holiday?

I love all the decorations, dying Easter eggs, Easter egg hunts, and cute Easter movies. But all of those things wouldn't have any meaning for me if that's all Easter was about. I could do all those things any time. Easter for me is definitely about Jesus' sacrifice on the cross for me so that I can be forgiven for all of my shortcomings and have an eternity with Him.

A Recipe A Week: Week 4


I posted a couple of weeks ago about how I had gone and gotten a hug basket of strawberries from the Farmer's Market. Well lucky for ya'll, I decided to try a new recipe with them :) It is a very simple recipe this week.

Punch Bowl Strawberry Shortcake
from my mother in law's recipe cards!

1 Angel food cake       
12 oz cool whip           
16 oz sour cream         
5 oz evaporated milk   
3/4 cups powdered      
sugar            
1 pkg strawberry         
glaze     
1 qt fresh strawberries

1. Mix sour cream, milk, cool whip, and sugar until smooth.

2. Break cake into large pieces and fold in mixture. Cut strawberries in 1/2 and mix in glaze.

3. Layer cake mixture and strawberries, ending with strawberries on top.

*I used a box of Angel food cake from the grocery store. I baked them using the two 9" pan option. You can either make 1 large cake with this recipe or 2 small cakes.




Excuse the backdrop, but we are in the process of remodeling our kitchen :)

1. Do you make friends easily?
 
No!!! Actually this has always been a real problem for me. I would have a really hard time making friends, and the friends I did make would always move away. I've always been a little on the shy side. I think that's why I love blogging so much! It's my one outlet where I can just be myself, and my followers will love me anyway :)
 
2. What 3 qualities are a must in a friend?
 
Well first of all they need to be loyal. Not the kind of friend who will go behind your back and say something bad about you or not stand up for you when they hear someone else doing it. They need to be honest too. Like, tell me if I have something stuck in my teeth! But be sweet about it :) And lastly, they need to be understanding and non judgemental on all the areas of life where I fall short.
 
3. What makes you a good friend?
 
I would like to think that I am all of the must-have qualities above!
 
4. Have you ever met a bloggy friend in real life?
Yes? Tell us about it. No? Who would you love to meet?
 
Well, I have only been blogging for about 2 months now so I've met some amazing people but haven't gotten around to meeting any yet! I would absolutely love to meet Ashley from It's just a bunch of Hocus Pocus! We email back and forth all the time because we can't believe how much in common we have. I would also love to meet Kae from Barefeet Make Me Happy, and Elizabeth from Life with Elizabeth because they're both so sweet! I would just love to meet you all to tell ya'll the truth :)
 
5. Who is your best friend? Tell us about them.
 
Well of course there is the gorgeous man I am lucky enough to call my husband! We have been together for almost 5 years (married for almost 1 of them!), and we have been through so much during that time. We've had a lot of ups and downs and with every experience we have gotten closer. We love going to the park with our pups, grilling out, and watching movies together. What we have really enjoyed though is visiting new places and trying new things together.
 



Then there's my mom and my sister. My mom always said that she had 2 girls so that she could have 2 best friends. I love the time that we get to spend together. We enjoy going shopping, going to the beach, getting pedicures, and going out to lunch together. But they're the type of friends that we have fun just sitting and home and visiting with each other too :)
